50ml Santa Teresa 1796
20ml fino sherry
15ml tomato infused Santa Teresa*
10ml simple syrup
7.5ml pear liqueur
3 dashes of Absenthe blanche
**tomato puree that we have infused with Santa Teresa and then centrifuged to split the solids from the liquids.
All ingredients are shaken together and strained over cracked ice.
Garnished with lemon zest and cherry tomato.
