50ml Santa Teresa 1796
20ml fino sherry
15ml tomato infused Santa Teresa*
10ml simple syrup
7.5ml pear liqueur
3 dashes of Absenthe blanche

All ingredients are shaken together and strained over cracked ice.
Garnished with lemon zest and cherry tomato.
A very refreshing rich rum balanced with light acidic tomato notes, dried with sherry and sweetened with pear with a light liquorice back note. Perfect if you like the classic highball style of drink.
